This easy Caramel fudge recipe makes for a delicious bite-sized treat. Sweet, rich and salty, it's a great option when entertaining guests.

Salted caramel fudge

Ingredients

  • 397g can sweetened condensed milk
  • 1 cup (220g) brown sugar
  • 125g butter
  • 2 tbs glucose syrup
  • 2 tbs golden syrup
  • 200g white chocolate, chopped
  • 1/4 tsp sea salt flakes
  • Sea salt flakes, extra, to sprinkle

Method

  1. Step 1

    Grease a 20cm (base measurement) square cake pan and line with baking paper, allowing the sides to overhang.
  2. Step 2

    Place the condensed milk, sugar, butter, glucose syrup and golden syrup in a medium saucepan over low heat. Cook, stirring and brushing down the side of the pan with a wet pastry brush occasionally, for 10 mins or until the sugar completely dissolves.
  3. Step 3

    Increase heat to medium-high. Cook, stirring constantly, for 8-10 mins or until the mixture thickens and comes away from the side of the pan. Remove from heat. Add chocolate and salt. Stir until chocolate melts and mixture is smooth. Pour into the prepared pan and smooth the surface. Sprinkle with extra salt. Set aside for 1 hour or until firm. Turn onto a clean work surface and cut into pieces. Store in an airtight container at room temperature for up to 3 weeks.
