Ingredients

  • 350g oven-roasted almonds
  • 1/2 cup (110g) caster sugar
  • 1/2 tsp sea salt flakes
  • 1 tsp dried chilli flakes
  • 20g butter

Method

  1. Step 1

    Line a baking tray with baking paper. Combine the almonds, sugar, salt, chilli and ½ cup (125ml) water in a saucepan over medium-high heat. Cook, stirring constantly, for 5 mins or until sugar dissolves. Cook, stirring, for a further 5 mins or until liquid dissolves and sugar starts to caramelise. Add the butter. Remove from heat. Stir to combine.
  2. Step 2

    Pour the hot almond mixture over the lined tray in a single layer. Use 2 forks to carefully separate almonds. Set aside for 30 mins to set.
