Sausage and veg tray bake


  • 500g pkt Coles Finest Australian Selection Sausages
  • 400g can diced tomato with garlic
  • 1 red onion, cut into wedges
  • 1 yellow capsicum, seeded, chopped
  • 4 vine-ripened tomatoes, quartered
  • 1/4 cup oregano sprigs
  • 200g vine-ripened cherry tomatoes
  • Basil pesto, to serve
  • Oregano sprigs, extra, to serve

  1. Step 1

    Preheat oven to 200°C. Heat a large frying pan over high heat. Cook the sausages, turning occasionally, for 5 mins or until brown all over.

  2. Step 2

    Pour the diced tomato with garlic over the base of a 10-cup (2.5L) baking tray. Top with the onion, cut into wedges, capsicum and tomato. Sprinkle with oregano. Season. Add sausages and cherry tomatoes. Spray with olive oil spray. Bake for 30 mins or until the vegetables are tender and the sausages are cooked through.

    Top with pesto and extra oregano to serve.
