Savoury baked apples with maple-bacon rice

Ingredients

  • 6 Gala apples
  • 60g butter
  • 4 streaky bacon rashers, finely chopped
  • 2 spring onions, thinly sliced
  • 2 tsp chopped thyme
  • 1 tbs maple syrup
  • 250g pkt microwavable brown rice & quinoa
  • Thyme sprigs, to serve

Method

  1. Step 1

    Preheat oven to 180°C. Line a large roasting pan with baking paper. Cut the tops off the apples, about 3cm from stem ends. Reserve apple tops. Use an apple corer or small spoon to core the apples, leaving the bottoms intact. Scoop out the inside of each apple, leaving a 1.5cm-thick shell. Use a small sharp knife to score a line around the middle of each apple.

  2. Step 2

    Melt the butter in a non-stick frying pan over medium heat. Add bacon and cook, stirring, for 5 mins or until lightly golden. Add the spring onion and cook, stirring, for 1-2 mins or until spring onion softens. Stir in the chopped thyme and maple syrup.

  3. Step 3

    Heat the rice mixture in the microwave following packet directions. Fold the rice mixture through the bacon mixture until combined. Season.

  4. Step 4

    Place the apples on the lined pan. Fill the apples with the rice mixture, pressing down firmly. Replace the apple tops. Cover with foil.

  5. Step 5

    Bake apples, turning 180 degrees on the tray halfway through cooking, for 1 hour or until the apples are tender and the rice mixture is heated through. Transfer to a serving platter and serve warm with thyme sprigs.
