  • 2 large orange sweet potatoes, peeled, cut into 1cm-thick batons
  • 2 tsp olive oil
  • 1 tsp sea salt flakes
  • 2 tbsp rosemary, coarsely chopped

Method

  1. Step 1

    Preheat oven to 220C. Line 2 baking trays with baking paper.

  2. Step 2

    Combine the sweet potato, oil, salt and rosemary in a large bowl. Season with pepper and toss to combine. Scatter over the baking trays in a single layer.

  3. Step 3

    Roast, turning occasionally and swapping the trays halfway through cooking, for 20 mins or until golden brown and tender. Serve.
