Seafood pizza

Ingredients

  • 200g pkt Coles Thin & Crispy Medium Pizza Bases (2 pack)
  • 1/3 cup (80ml) pizza sauce
  • 200g punnet cherry tomatoes, halved
  • 16 raw peeled prawns
  • 20 squid rings
  • 2 garlic cloves, crushed
  • 1 tbs olive oil
  • 6 anchovy fillets, finely chopped
  • 1 cup (120g) Coles Australian Shredded Pizza Blend Cheese
  • 60g pkt Coles Australian Baby Rocket
  • Lemon wedges, to serve
  • Chilli flakes, to serve (optional)

Method

  1. Step 1

    Preheat the oven to 220°C. Place the pizza bases on 2 baking trays. Spread with the pizza sauce.

  2. Step 2

    Line a small baking tray with baking paper. Arrange tomato, cut-side up, on the lined tray. Season.

  3. Step 3

    Place the pizza bases and tomato in the oven. Bake for 10 mins or until pizza bases are warm and tomato is beginning to wilt.

  4. Step 4

    Meanwhile, combine the prawn, squid, garlic and oil in a large bowl. Season.

  5. Step 5

    Top the pizza bases evenly with anchovies, prawn mixture, tomato and cheese. Bake for 12-15 mins or until the pizza bases are crisp, prawns curl and cheese melts. Scatter with rocket. Serve with lemon wedges and chilli flakes.

Use it Up:
You can use any leftover cooked seafood from the day before to make this pizza. Bring all ingredients to room temperature first. Bake the pizza bases with tomato in the oven for 10 minutes, then add the cooked seafood and bake for 5 more minutes or until just heated through.

Here are some tips for making seafood pizza:

  • Preheat the oven to 220°C for 30 minutes to 1 hour before putting the pizza in to bake.

  • If you want to use frozen seafood, thaw it in the fridge overnight, gently squeeze out any additional liquid, then sauté with garlic and oil briefly before adding it to the pizza at the end of the cook.

  • Avoid putting too many ingredients on the pizza to prevent the crust becoming soggy. 

  • Keep an eye on the prawns to avoid overcooking them. Take the pizza out of the oven the minute the prawns curl into a C, before they curl into an O shape. 

  • The key to a crispy crust and nicely cooked toppings is to cook pizza on a high heat for the shortest amount of time possible. A longer stay in the oven increases the risk of drying out the crust. 

  • When you’re ready to bake it, place your pizza closest to the heating element of your oven.

Tips for storing and reheating leftovers from this easy seafood pizza recipe

Slice the pizza and place the slices in an airtight container in the fridge for no longer than 3 days. Reheat on low heat in the oven or on a pan on the stovetop. To reheat on the stove, crisp up the bottom of the pizza on medium heat first, then reduce the heat to low, add a couple of drops of water into the pan, and cover the pan with a lid for a minute.
