Switch up your typical shepherd's pie recipe and try out this potato pie dish. It’s the perfect way to use up some of those Chrissy leftovers!

Shepherds ‘style’ potato pie

Ingredients

  • 2 cups leftover roasted vegetables, larger pieces sliced
  • 3 cups leftover roast meat such as turkey, chicken, beef, lamb or pork, chopped
  • 1 1/2 cups leftover homemade, reconstituted instant or liquid gravy
  • 2 tsp Worcestershire sauce or barbecue sauce
  • 2 sprigs woody herbs such as thyme or rosemary, leaves chopped
  • 4 cups (800g) potato salad, roughly mashed
  • 1/3 cup (40g) grated cheese such as cheddar, pizza or mozzarella

Method

  1. Step 1

    Preheat oven to 200°C. Grease a 2.5L-capacity baking dish.

  2. Step 2

    Combine roast vegetables, leftover turkey, chicken, beef, lamb or pork, leftover gravy, Worcestershire sauce or barbecue sauce and herbs in a large bowl and mix well. Season. Transfer to prepared baking dish. 

  3. Step 3

    Top the mixture with roughly mashed potato salad in an even layer, then sprinkle with cheese. Cover loosely with foil and bake for 30 minutes. Uncover and bake for a further 12-15 mins until golden and bubbling.
