Preheat oven to 200°C. Heat a medium saucepan over high heat. Cook the mince, stirring with a wooden spoon to break up lumps, for 5 mins or until the mince changes colour. Add the seasoning and 1 cup (250ml) water and stir to combine. Bring to a boil. Add the vegetables and half the thyme.
Transfer the mince mixture to a 6-cup (1.5L) oven-proof dish. Heat the potato following packet directions. Transfer the potato to a medium heatproof bowl and stir to combine. Spoon the potato over mince mixture. Bake for 10 mins or until pie is hot and potato is golden.
Serve pie sprinkled with remaining thyme leaves.
