Chicken thigh fillets are the best choice of cut for this slow cooker lemon chicken thighs recipe. Affordable and with just the right amount of fat, they are perfect for slow cooking and won’t dry out. If possible, consider using free-range chicken pieces, which tend to have more flavour.
There are so many potato varieties available that it can be hard to know which one is the right one for the dish. This recipe for slow cooked lemon chicken calls for red royale potatoes, which are a waxy variety. Waxy potatoes are low in starch and contain more moisture, which makes them ideal for slow cooking. If red royale potatoes are unavailable, you could also use kipfler or most red-skinned potatoes, such as pontiac or desiree.
For extra flavour when cooking this lemon chicken in slow cooker recipe, it’s best to brown the chicken in a pan before placing it in the slow cooker. The chicken will also cook more evenly if the pieces are of similar sizes, so choose fillets of the same size or chop into even pieces. When preparing your slow cooker, layer the potatoes first on the base of the appliance, add the chicken pieces, then spoon the sauce over the top.
Freshly steamed green veggies (we used broccolini and snow peas) will balance the tanginess of the lemon juice – you can also add a last-minute squeeze of lemon juice to the veggies before serving to complement the chicken. And don’t waste that sauce! Try serving with a loaf of crusty bread to soak up all the delicious juices.
