Slow cooker pork chops

Ingredients

  • 2 tbs cornflour
  • 1 cup (250ml) chicken stock
  • 2 tsp olive oil
  • 4 (900g) Coles Australian Pork Forequarter Cutlets
  • 400g cup mushrooms, large mushrooms halved
  • 1 leek, pale section only, thinly sliced
  • 4 garlic cloves, crushed
  • 2/3 cup (160ml) dry white wine
  • 1/3 cup (80g) Dijon mustard
  • 1 tbs honey
  • 2 tbs thyme leaves
  • Mashed potatoes, to serve
  • Steamed green vegetables, to serve
  • Thyme sprigs, to serve

Method

  1. Step 1

    Combine the cornflour and a little of the chicken stock in a small bowl until smooth. Gradually add the remaining stock, stirring well between each addition. Set aside.

  2. Step 2

    Heat the oil in a large deep frying pan over high heat. Season the pork and cook, in 2 batches, for 1-2 mins each side or until lightly browned. Transfer to the bowl of a slow cooker.

  3. Step 3

    Reduce heat to medium and add the mushroom, leek and garlic to the same pan. Cook, stirring occasionally, for 10 mins or until vegetables soften slightly. Add to slow cooker.

  4. Step 4

    Add the wine to same pan and bring to a simmer. Whisk in the mustard, honey, thyme and stock mixture. Bring to the boil. Pour into slow cooker, making sure the pork, vegetables and sauce are layered evenly.

  5. Step 5

    Cover and cook for 4 hours on high (or 8 hours on low) or until the pork is very tender.

  6. Step 6

    Divide the pork chops, vegetables and sauce among serving bowls. Serve with mash and steamed greens. Sprinkle with extra thyme.
