Sticky soy beef ribs

Ingredients

  • 1 tbs vegetable oil
  • 1.6kg Coles Australian No Added Hormones Beef Short Ribs
  • 250g turnip, peeled, cut into 3cm pieces
  • 40g ginger, thinly sliced
  • 4 garlic cloves, crushed
  • 4 spring onions, cut into 3cm lengths
  • 1/3 cup (80ml) Chinese cooking wine
  • 1/4 cup (60ml) honey
  • 1/3 cup (80ml) Coles Asia Soy Sauce
  • 2 whole star anise
  • 1 cinnamon stick

Ginger dressing

  • 1/4 cup (60ml) vegetable oil
  • 3 tsp finely grated ginger
  • 1/4 cup (60ml) malt vinegar
  • 3 tsp honey
  • 1 1/2 tbs Coles Asia Soy Sauce
  • 1 1/2 tsp sesame oil

Method

  1. Step 1

    Heat the oil in a large frying pan over medium-high heat. Season the beef and cook, turning occasionally, for 8 mins or until the beef is browned.
  2. Step 2

    Transfer beef to a slow cooker with turnip, ginger, garlic, spring onion, Chinese cooking wine, honey, soy sauce, star anise, cinnamon and 4 cups (1L) water. Cover and cook for 4 hours on high (or 8 hours on low) or until the beef is tender.
  3. Step 3

    Meanwhile, to make the ginger dressing, place vegetable oil and ginger in a small saucepan over low heat. Cook, stirring occasionally, for 4-5 mins or until ginger is golden. Remove from heat. Carefully stir in vinegar, honey, soy sauce and sesame oil.
  4. Step 4

    Transfer the beef and turnip to a plate. Cover with foil to keep warm. Strain 2 cups (500ml) of cooking liquid into a frying pan. Bring to a simmer over high heat. Cook for 8 mins or until mixture reduces slightly. Add the beef and turnip. Turn to coat. Transfer to a serving platter. Drizzle with dressing.
