This smashed cucumber salad is light, refreshing and perfect for summer. Plus, it only takes 10 minutes to whip up.

Smashed cucumber salad


  • 2 Lebanese cucumbers, chopped
  • 1/4 cup mint leaves
  • 1/4 cup coriander leaves
  • 2 spring onions, thinly sliced
  • 2 tbs ponzu sauce or sesame soy dressing
  • Toasted sesame seeds, to serve
  • Dried chilli flakes, to serve
  • Chilli oil, to serve

  1. Step 1

    Place cucumber in a large bowl and use the end of a rolling pin to coarsely crush. Toss in the mint, coriander, spring onion and sauce or dressing. 

  2. Step 2

    Transfer the cucumber mixture to a serving bowl. Sprinkle with toasted sesame seeds and dried chilli flakes. Drizzle with chilli oil to serve.
