Smoky chicken stuffed sweet potatoes

Seven sweet potatoes stuffed with chicken and tomatoes with a coriander garnish and baba ganoush on the side


  • 8 small (about 200g each) gold sweet potatoes
  • 1/2 bunch coriander, sprigs picked
  • 2 cups shredded Coles RSPCA Approved Hot Roast Chicken
  • 150g Coles Smokey Baba Ganoush Dip
  • 125g cherry tomatoes, quartered

  1. Step 1

    Preheat oven to 200°C. Line a baking tray with baking paper. Prick the sweet potatoes all over with a fork. Cook in microwave on high, in 2 batches, turning once, for 10 mins. Arrange on the lined tray. Bake, turning once, for 20-25 mins or until tender.
  2. Step 2

    Meanwhile, reserve one-quarter of the coriander sprigs. Coarsely chop the remaining coriander sprigs and combine in a bowl with chicken and dip.
  3. Step 3

    Use a sharp knife to cut a slit lengthways in top of each sweet potato (don’t cut all the way through). Squeeze the base to open and gently mash the flesh with a fork. Spoon chicken mixture over each sweet potato. Top with the tomato and reserved coriander.
  4. Step

    To give the smoky chicken mixture some crunch, stir in chopped seeded red capsicum.
