Smoky guacamole


  • 2 medium avocados, stoned, peeled
  • 1 tsp smoked paprika
  • 1/4 cup (60ml) lemon juice
  • 1/2 small red onion, finely chopped*
  • 100g mixed tomatoes, quartered
  • 2 tbs chopped basil

  1. Step 1

    Heat a chargrill on high. Sprinkle cut side of avocado with paprika. Spray with olive oil spray. Cook avocado, cut-side down, for 3 mins or until charred. Turn and cook for a further 2 mins.
  2. Step 2

    Place avocado in a serving bowl and use a fork to mash until smooth. Stir in the lemon juice, onion, tomato and basil.

    *If unavailable, use 2 spring onions, thinly sliced.

    Serve with chopped mixed tomatoes and basil leaves.
