Smoky salmon tostadas

Ingredients

  • 140g tub Leggo’s Tomato Paste
  • 400g can Edgell Four Bean Mix, rinsed, drained
  • 2 x 95g cans John West Salmon in Springwater, drained
  • 4 burrito tortilla wraps
  • 400g American barbecue slaw kit

Method

  1. Step 1

    Preheat oven to 180°C. Place the tortillas on 2 large baking trays. Spread the tomato paste evenly over the tortillas, leaving a 1cm border. Bake for 8-10 mins or until golden and starting to crisp (they will become more crisp on standing). Transfer the tortillas to a serving platter.

  2. Step 2

    Divide the beans evenly among the tortillas. Top with three-quarters of the slaw.  Divide the salmon and remaining slaw evenly among the tortillas.

  3. Step 3

    Drizzle the tostadas with the smoky chipotle dressing from the salad kit and season to serve.
