  • 1 cup (220g) caster sugar

  • 2 cups (300g) plain flour
  • 1 1/4 tsp baking powder
  • 1 tbs ground cinnamon
  • 2 tbs caster sugar, extra

Method

  1. Step 1

    Preheat oven to 180°C. Line 2 baking trays with baking paper. Use an electric mixer to beat the butter and sugar in a bowl until pale and creamy. Add the egg and beat until well combined. Sift together the flour and baking powder and stir this into the butter mixture.

  2. Step 2

    Combine the cinnamon and extra sugar in a shallow bowl.

  3. Step 3

    Roll tablespoonfuls of cookie dough into balls, then roll in the cinnamon sugar mixture to evenly coat. Place on the lined trays, allowing room for spreading.

  4. Step 4

    Bake, swapping the trays halfway through cooking, for 15 mins or until light golden. Set aside on the trays to cool completely.

Made famous in America, snickerdoodles are cookies traditionally made from flour, butter, eggs and baking powder and then rolled in a cinnamon sugar mixture. The result is a soft, fluffy, sweet and spiced treat that’s perfect to serve with your afternoon cuppa, or makes a great edible gift when you don’t want to show up empty-handed.

The snickerdoodle cookie has Dutch-German roots and probably made its way across the Atlantic Ocean in the late 19th century. The simplicity of the recipe coupled with its lightly spiced flavour and delicate texture sent snickerdoodles’ popularity soaring. They were a particular favourite of Mennonite and Amish baking communities, in part thanks to the accessibility of its ingredients. Modern interpretations haven’t wandered too far from the original recipe except to round the shape from a bar to the classic circular cookie we (and Girl Scouts) know and love today.

Cooking tips for the perfect snickerdoodle recipe

Snickerdoodle cookies are easy to recreate at home. You’ll need just 6 ingredients you likely already have, plus 15 minutes of prep time and 15 minutes in the oven.  For those on a time crunch, another perk of snickerdoodles is that the batter doesn’t need to be chilled prior to baking. Simply portion, roll, and bake until golden.

Be careful not to overbeat the mixture, as this can make the dough too dry. If you need to thicken the dough, add 1-2 tbs flour. To prevent your snickerdoodles from getting hard, keep a watchful eye on them as they cook, and remove them from the oven when they turn light brown. Snickerdoodles are meant to be soft – it’s what they’re known for! Stored in an airtight container, they’ll stay delightfully spongy with a slight chew for the next couple of days.
