Ingredients

  • 6 cups (1.5L) chicken stock
  • 400g Coles RSPCA Approved Australian Chicken Breast Fillets, halved horizontally
  • 2 tbs olive oil
  • 1 brown onion, finely chopped
  • 1 celery stick, finely chopped
  • 2 carrots, finely chopped
  • 60g sliced streaky bacon, cut into 1cm pieces
  • 2 garlic cloves, crushed
  • 2 tbs fish sauce
  • 340ml can light and creamy evaporated milk
  • 1 cup (180g) macaroni
  • 2 cups finely shredded green cabbage
  • Spring onions and flat-leaf parsley, chopped to serve

Method

  1. Step 1

    Bring the stock to the boil in a medium saucepan over medium heat. Add the chicken and return to a gentle boil. Simmer for 2 mins. Remove from heat and cover with a lid. Set aside for 10 mins, allowing residual heat to finish cooking the chicken, or until the chicken is cooked through. Remove chicken and shred. Reserve stock.

  2. Step 2

    Meanwhile, heat oil in a medium saucepan over medium heat. Add the onion, celery and carrot and cook, stirring occasionally, for 5 mins or until starting to soften. Stir in the bacon and garlic. Add fish sauce, evaporated milk and reserved stock. Bring to a simmer. Add macaroni and cook, uncovered, for 8 mins or until macaroni is tender, adding cabbage in the last 2 mins of cooking. Add shredded chicken and cook for 2 mins or until heated through.

     

  3. Step 3

    Serve soup sprinkled with sliced spring onions and finely chopped parsley. Season with pepper.

Use salt-reduced stock if preferred.

Use it up:
This recipe is a great way to use up any leftover roast chicken. Replace the breast fillets with leftover chicken and add to the broth in the last two minutes to stir through. You can keep any leftover soup, in a covered container, for up to 2 days in the fridge.
