This Southern-spiced chicken recipe makes for a great dinner option. Ready in a few easy steps, it’s smoky, fresh and above all delicious.

Southern-spiced chicken with plum salad

Ingredients

  • 4 Coles RSPCA Approved Australian Chicken Breast Fillets
  • 2 tbs olive oil
  • 4 small ripe plums, stoned, cut into wedges
  • 1 avocado, stoned, peeled, sliced
  • 1 red onion, thinly sliced
  • 120g pkt Coles Australian Baby Rocket
  • ½ cup coriander leaves
  • ½ cup mint leaves
  • 1 tbs lime juice
  • Lime wedges, to serve

Southern spice mix

  • 2 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • ¼ tsp cayenne pepper

Method

  1. Step 1

    To make the Southern spice mix, combine paprika, garlic powder, onion powder, oregano, thyme and cayenne pepper in a large bowl. Season well.
  2. Step 2

    Add chicken and half the oil to the Southern spice mix in the bowl. Toss to coat chicken in spice mix.
  3. Step 3

    Heat a barbecue grill or chargrill on medium. Cook the chicken for 5-6 mins each side or until cooked through. Transfer to a plate. Cover with foil. Set aside for 5 mins to rest.
  4. Step 4

    Combine plum, avocado, onion, rocket, coriander and mint in a bowl. Whisk lime juice and remaining oil in a bowl until combined. Drizzle over salad. Toss to combine. Divide among serving plates. Slice chicken. Serve with salad and lime wedges.
