Ingredients

  • 500g Coles Simply Pasta Spaghetti
  • 400g gold sweet potato, peeled, cut into 2cm pieces
  • 1/4 cup (60ml) olive oil
  • 1 red capsicum, seeded, chopped
  • 200g Coles Frozen Baby Beans
  • 4 garlic cloves, crushed
  • 1 tsp dried chilli flakes (optional)

Method

  1. Step 1

    Cook the pasta and sweet potato in a large saucepan of boiling water following packet directions or until al dente. Drain, reserving 1 cup (250ml) cooking liquid.

  2. Step 2

    Heat the oil in a large frying pan over medium heat. Add capsicum, beans, garlic and chilli flakes, if using, and cook, stirring, for 6 mins or until the vegetables are tender.

  3. Step 3

    Add the pasta mixture and reserved cooking liquid to the vegetable mixture and toss to combine. Season.
