This fruity cooler is a must-try recipe. Filled with strawberries, basil, thyme and vanilla, it’s a flavour explosion.

Sparkling strawberry and basil cooler

Ingredients

  • 1/4 cup (55g) caster sugar
  • 2 tsp vanilla bean paste
  • 250g strawberries, thinly sliced
  • 1/4 cup small basil leaves
  • 2 thyme sprigs
  • Ice cubes, to serve
  • 1.5L chilled soda water

Method

  1. Step 1

    Place the sugar, vanilla and half the strawberry in a small saucepan over medium heat. Cook, stirring, for 5 mins or until the sugar dissolves and the strawberry collapses. Cool slightly. Transfer to a blender and blend until smooth. Transfer to a bowl and set aside to cool completely.
  2. Step 2

    Place the strawberry mixture in a large serving jug. Add the basil, thyme, remaining strawberry and ice. Top up with soda water to serve.
