Speedy glazed vegetables with prosciutto

Ingredients

  • 2 bunches Dutch carrots, ends trimmed, peeled
  • 300g green beans, trimmed
  • ½ cup (80g) Western Star Original Spreadable Butter
  • 75g prosciutto slices, torn
  • 2 garlic cloves, sliced
  • 1 tbs thyme sprigs
  • 1 tbs honey
  • Western Star Original Spreadable Butter, extra, to serve
  • ¼ cup (20g) flaked almonds, toasted
  • Thyme sprigs, extra, to serve

Method

  1. Step 1

    Cook the carrots in a steamer over a saucepan of simmering water for 5 mins. Add beans. Cook for 2 mins or until vegetables are just tender.
  2. Step 2

    Meanwhile, melt the Western Star Original Spreadable in a large deep frying pan over medium heat. Add the prosciutto. Cook for 3 mins or until golden. Add the garlic and thyme. Cook, stirring occasionally, for 2 mins or until prosciutto is crisp.
  3. Step 3

    Drizzle the honey over the prosciutto mixture in the pan. Add the carrots and beans. Toss well. Season. Transfer to a serving platter. Top with dollops of extra Western Star Original Spreadable. Sprinkle with almond and extra thyme.
