Speedy pork satay san choy bau

Ingredients

  • 150g vermicelli noodles
  • 2 tbs soy sauce
  • 1 1/2 tbs peanut butter
  • 1 tbs peanut oil
  • 500g Coles Australian Pork Mince
  • 1 tbs finely grated ginger
  • 2 garlic cloves, crushed
  • 2 spring onions, thinly sliced
  • 1 bunch baby broccoli, chopped
  • 2 tsp rice wine vinegar
  • 1 large iceberg lettuce, leaves separated
  • Chopped roasted peanuts, to serve

Method

  1. Step 1

    Place the noodles in a heatproof bowl. Cover with boiling water and set aside for 5 mins to soften. Drain.
  2. Step 2

    Meanwhile, combine the soy sauce, peanut butter and ½ cup (125ml) water in a small bowl.
  3. Step 3

    Heat the oil in a large frying pan over high heat. Add the mince and cook, stirring with a wooden spoon to break up the lumps, for 6 mins or until the mince changes colour. Add the ginger, garlic and spring onion and stir-fry for 1 min or until aromatic. Add broccoli and soy sauce mixture and cook, stirring, for 3 mins or until the sauce thickens. Stir in the vinegar.
  4. Step 4

    Divide the lettuce among serving plates. Top with the noodles and mince mixture. Sprinkle with peanut to serve.
