Speedy sesame lamb bean noodles

Ingredients

  • 2 x 240g pkts hokkien noodles
  • 3 tsp sesame oil
  • 1 tbs finely grated ginger
  • 1 garlic clove, crushed
  • 500g Coles Australian Lamb Mince
  • 150g green beans, trimmed, sliced diagonally
  • ¼ cup (60ml) soy sauce
  • 2 tbs mirin
  • 2 spring onions, thinly sliced diagonally
  • ¼ cup coriander leaves
  • 2 tsp sesame seeds, toasted

Method

  1. Step 1

    Cook the noodles following packet directions. Drain well.
  2. Step 2

    Meanwhile, heat the oil in a wok or large frying pan over high heat. Add the ginger and garlic and stir-fry for 30 secs or until fragrant. Add the mince and stir-fry for 5 mins or until cooked through.
  3. Step 3

    Add beans and stir-fry for 2 mins. Add soy sauce, mirin and ¼ cup (60ml) water and stir-fry for 1 min or until well combined and heated through.
  4. Step 4

    Add noodles to the mince mixture and toss to combine. Serve with spring onion, coriander and sesame seeds.
