Ingredients

  • 460g pkt Coles Tasmanian Salmon Portions Skin Off
  • 1/4 cup (60ml) sriracha
  • 2 x 400g pkts Coles Asia Singapore Noodles
  • 350g pkt Coles Kitchen Asian Style Salad Kit
  • 2 small Lebanese cucumbers, thinly sliced

Method

  1. Step 1

    Preheat oven to 180°C. Line a large baking tray with baking paper. Arrange the salmon on the lined tray and brush with half the sriracha or chilli sauce. Bake for 12-15 mins or until just cooked through. Use a fork to flake the salmon.
  2. Step 2

    Meanwhile, cook the Singapore noodles following packet directions. Drain well. Prepare the salad kit in a large bowl following packet directions, reserving the noodles from the kit.
  3. Step 3

    Divide Singapore noodles, salad and cucumber among serving bowls. Top with salmon and drizzle with remaining sriracha or chilli sauce. Sprinkle with reserved noodles to serve.
