Spiced mulled wine

Ingredients

  • 750ml shiraz
  • 1/4 cup (60ml) brandy
  • 1 thinly sliced orange
  • 2 cinnamon sticks or quills
  • 3 whole star anise
  • 4 whole cloves
  • Pinch of ground nutmeg
  • 1 tsp vanilla bean paste
  • 1/3 cup (75g) caster sugar
  • 1 dried bay leaf

Method

  1. Step 1

    Place shiraz, brandy, orange, cinnamon, star anise, cloves, nutmeg, vanilla, sugar and bay leaf in a large saucepan over low heat. Cook, stirring occasionally, for 5 mins or until heated through (don’t bring to a simmer). Set aside for 5 mins to develop the flavours.

  2. Step 2

    Ladle into a heatproof serving jug, then pour into heatproof glasses. Serve with extra orange slices.
