Ingredients

  • 250g baby sweet corn, sliced diagonally
  • 290g Coles Kitchen Caesar Salad Kit
  • 1 Coles Hot Roast RSPCA Approved Chicken, meat shredded
  • 2 avocados, stoned, peeled, thinly sliced
  • 3 tsp sriracha mayonnaise

Method

  1. Step 1

    Place corn in a heatproof bowl. Cover with boiling water and set aside for 10 mins to soften. Drain well.

  2. Step 2

    Place leaves from the salad kit, corn, chicken and avocado in a serving bowl.

  3. Step 3

    Combine dressing from the kit and sriracha in a bowl. Sprinkle salad with bacon, parmesan and croutons from the kit. Drizzle with dressing mixture.

If you already have corn cobs in the fridge, use here instead of the baby corn. To cook the cobs, heat a barbecue or chargrill on medium-high. Cook, turning, for 10 mins or until lightly charred. Use a small serrated knife to cut down the sides of the corn cobs to release the kernels.
