Get stuck into this fresh and tasty sandwich with avocado and chicken, drizzled with spicy aioli.

Spicy chicken and avocado sandwich


  • 1 Coles Bakery Baguette or leftover sliced bread
  • 1/2 x 275g jar aioli
  • 1/3 cup chopped fresh herbs
  • 1/2 tsp dried chilli flakes
  • 350g shredded Coles Hot Roast Chicken or leftover chicken
  • 1 avocado, sliced
  • 3 roma tomatoes, sliced
  • 4-5 iceberg lettuce leaves, torn, or leftover salad leaves

  1. Step 1

    Split baguette (don't cut all the way through). Remove 2 cups of bread from centre (see Recipe tip).

  2. Step 2


    Combine the aioli, herbs and chilli in a small bowl. Spread inside of baguette with aioli mixture. Fill with chicken, avocado, tomato and salad leaves. Tie with kitchen string and cut with a serrated knife. Wrap in foil or plastic wrap and chill until ready to pack.

Process the bread to make breadcrumbs and freeze in a sealable plastic bag.
