Spicy jalapeno and mango margaritas

Ingredients

  • 2 mangoes, peeled, coarsely chopped
  • 1 tbs drained pickled sliced jalapeños
  • 1/4 cup (60ml) pickling liquid reserved
  • 1/3 cup (80ml) tequila or apple juice
  • 2 tbs Cointreau, orange-flavoured liqueur or orange juice
  • 1/2 cup (125ml) lime juice
  • 1/4 cup (60ml) agave syrup
  • 2 cups ice cubes
  • Mango wedges, to serve
  • 1 jalapeño chilli, thinly sliced (optional)

Method

  1. Step 1

    Place the chopped mango, pickled jalapeños and reserved pickling liquid in a blender and blend until smooth.

  2. Step 2

    Add the tequila or apple juice, Cointreau, orange-flavoured liqueur or orange juice, lime juice, agave syrup and ice. Blend until well combined.

  3. Step 3

    Pour the mango mixture into serving glasses. Top with mango wedges and chilli, if using, and serve immediately.

Use it up: Agave syrup is a liquid substitute for sugar. You can drizzle it over pancakes or waffles, or use it up in baking.
