Spicy lamb and pumpkin sausage rolls


  • 500g Coles Australian Lamb Mince
  • 200g Coles Finest Australian Beef & Lamb Sausages, casings removed
  • 1/2 brown onion, coarsely grated
  • 1 1/2 cups coarsely grated pumpkin
  • 1/2 cup (80g) panko breadcrumbs
  • 2 tsp Moroccan spice mix
  • 1/2 cup coarsely chopped coriander
  • 2 tbs coarsely chopped mint
  • 2 sheets frozen puff pastry, halved
  • 1 Coles Australian Free Range Egg, lightly whisked
  • 2 tsp black and white sesame seeds
  • Tzatziki dip, to serve

  1. Step 1

    Preheat oven to 200°C. Line 2 large baking trays with baking paper. Place the mince, sausage, onion, pumpkin, breadcrumbs, spice mix, coriander and mint in a large bowl. Use your hands to mix until well combined. Divide into 4 even portions.
  2. Step 2

    Shape 1 portion into a 24cm log and place along 1 long edge of 1 pastry half. Brush opposite edge with a little egg. Roll up to enclose filling. Repeat with remaining lamb mixture, pastry and egg. Sprinkle with sesame seeds. Cut each roll into 6 portions. Place on lined trays.
  3. Step 3

    Bake for 25-30 mins or until golden brown and cooked through. Transfer the sausage rolls to a serving platter and serve with the tzatziki.
