This 10-minute spicy mayo ramen soup is a great dish for when you’re in a rush. Plus, you can easily alter the recipe to serve more people.

Spicy mayo ramen soup


  • 1 Coles Australian Free Range Egg
  • 1 tsp finely grated ginger
  • 1 tbs Kewpie mayonnaise
  • 120g pkt Nongshim Shin Ramyun Noodle Soup
  • 2 cups (500ml) boiling water
  • Thinly sliced spring onion, to serve
  • Thinly sliced red chilli, to serve
  • Sesame seeds, to serve

  1. Step 1

    Combine the egg, ginger, mayonnaise and soup sachet from the noodle soup packet in a heatproof bowl. Place the noodles and vegetable sachet from the noodle soup packet in a small saucepan and pour over the boiling water. Bring to the boil and cook for 4½ mins or until noodles are tender. Drain noodles, reserving cooking liquid.
  2. Step 2

    Add noodles to the egg mixture and stir in enough cooking liquid to make a soup. Sprinkle with spring onion, chilli and sesame seeds to serve.
