Millie Tang’s Spring time cocktail

This easy cocktail recipe is perfect for the springtime. Pour this refreshing beverage next time you’re having people over, it’s sure to impress!

Ingredients

  • 40ml blanco tequila
  • 20ml lime juice
  • Ice cubes, to serve
  • Sparkling wine, to serve
  • Rosemary sprig, to decorate

Rosemary honey syrup

  • 1 cup (350g) honey
  • 1 rosemary sprig, leaves picked

Method

  1. Step 1

    To make the rosemary honey syrup, place honey and 1 cup (250ml) water in a saucepan over low heat and bring to a simmer (do not boil). Stir in the rosemary leaves. Cool completely. Strain through a fine sieve into an airtight jar.
  2. Step 2

    Place the tequila, lime juice and 20ml rosemary honey syrup in a cocktail shaker with ice cubes. Shake until chilled. Strain mixture through a fine sieve into a champagne glass. Top with wine or champagne and decorate with rosemary.
