Ingredients

  • 120ml Aperol Aperitivo
  • 120ml sweet vermouth
  • Ice cubes, to serve
  • Lemon peel, to decorate

Strawberry gin

  • 700ml gin
  • 250g strawberries, sliced

Method

  1. Step 1

    To make strawberry gin, place the gin and strawberry in an airtight container. Set aside for 1-2 days or until strawberry is pale and the gin is light pink in colour. Strain the gin mixture into a clean airtight container and discard the solids.
  2. Step 2

    Combine the Aperol, vermouth and 120ml strawberry gin in a jug. Place ice cubes in tumbler glasses. Pour over the Aperol mixture and decorate with lemon peel to serve.
