Sriracha and lime glazed salmon

Ingredients

  • 1 tbs sriracha or chilli sauce
  • 2 limes, zested and juiced
  • 2 bunches baby broccoli, ends trimmed
  • 4 salmon fillets
  • 2 x 250g pkts microwave long-grain rice
  • 2 tsp sesame seeds, toasted

Method

  1. Step 1

    Combine the sriracha or chilli sauce, half the lime zest and 2 tbs of the lime juice in a small bowl.
  2. Step 2

    Heat a large non-stick frying pan over medium heat. Cook the baby broccoli, in 2 batches, for 2 mins each side or until charred and just tender. Cover with foil to keep warm.

  3. Step 3

    Add the salmon to the pan and cook for 3 mins each side for medium. Pour over the lime juice mixture and turn to coat. Cook for 1 min or until the salmon is caramelised.
  4. Step 4

    Meanwhile, cook the rice following packet directions.
  5. Step 5

    Divide salmon, rice and broccolini among serving plates. Drizzle with pan juices and sprinkle with sesame seeds and remaining lime zest.
