Ingredients

  • 125g butter, softened
  • 2/3 cup (150g) caster sugar
  • 1 Coles Australian Free Range Egg
  • 2 cups (300g) plain flour
  • 76g pkt Coles Lollipops, red and green lollipops only

Method

  1. Step 1

    Preheat oven to 180°C. Line 2 baking trays with baking paper.
  2. Step 2

    Use an electric mixer to beat the butter and sugar in a bowl until pale and creamy. Add the egg and beat until just combined. Add the flour and stir to combine. Turn onto a lightly floured surface and knead until smooth. Cover with plastic wrap and place in the fridge for 15 mins or until firm.
  3. Step 3

    Meanwhile, carefully remove the lollipops from the sticks. Place the red and green lollies in separate plastic bags. Use a rolling pin to finely crush.
  4. Step 4

    Roll out the dough on a lightly floured surface to a 3mm-thick disc. Use a sharp knife to cut the dough into triangle shapes to resemble trees. Use small round cutters to cut discs from inside of the trees. Place on the lined trays.
  5. Step 5

    Bake for 7-8 mins or until lightly golden. Use a spoon to fill each hole with a little of the crushed lollies. Bake for a further 2 mins or until the crushed lollies melt and the biscuit is golden. Set aside on the trays to cool completely.
