Steak tartare toasts

Ingredients

  • 300g Coles Australian No Added Hormones Beef Eye Fillet
  • 6 anchovies, finely chopped
  • 1 tbs finely chopped shallot
  • 1 pickled cucumber, finely chopped
  • 3 tsp drained baby capers, finely chopped
  • 2 tbs chopped flat-leaf parsley
  • 1 tbs chopped chives
  • 1/4 cup (60ml) extra virgin olive oil
  • 2 tbs Worcestershire sauce
  • 1/4 tsp finely grated lemon rind
  • 120g Always Fresh Crustini Olive
  • Oil & Sea Salt
  • Lemon zest, to serve

Method

  1. Step 1

    Trim any fat from the beef. Finely chop the beef and place in a medium bowl. Stir in the anchovy, shallot, cucumber, capers, parsley, chives, oil, Worcestershire sauce and lemon rind. Season. Set aside for 5 mins to develop the flavours.

  2. Step 2

    Arrange the crustini on a serving platter. Top with beef mixture and sprinkle with the lemon zest to serve.
