Ingredients

  • 8 medium white flat mushrooms, sliced
  • 1 bunch baby broccoli, trimmed
  • 150g snow peas, trimmed
  • 150g sugar snap peas, trimmed
  • 2 tbs olive oil
  • 400g pkt Coles Beef Thin Cut Scotch Fillet
  • 2 x 250g pkts ancient grains microwavable rice
  • 1/2 cup (60g) frozen peas
  • 2 tbs soy sauce
  • 2 tbs rice wine vinegar
  • 1 tsp brown sugar
  • 1 long red chilli, thinly sliced (optional)
  • Toasted cashews, to serve
