Finely grate the rind of 1 lime. Juice the lime. Cut the remaining lime in half. Remove sauce sachet from the stir-fry kit. Pour into a small bowl and add the lime rind, lime juice and 1 tbs water. Brush half the sauce mixture over the pork. Heat a greased chargrill on high. Cook the pork, in batches, for 2 mins each side or until lightly charred and cooked through. Transfer to a plate and cover with foil to keep warm.
Spray a wok or large frying pan with olive oil spray and heat over high heat. Add vegetables from the stir-fry kit and cook, stirring, for 2-3 mins or until just tender. Add the remaining sauce mixture and stir-fry for 1 min. Add pork to wok or pan and stir-fry for 1-2 mins or until well combined. Season.
Heat the rice following packet directions. Divide the rice and pork mixture among serving bowls. Sprinkle with coriander and serve with lime halves.
