Finely grate rind of 1 lime. Juice lime. Cut remaining lime in half. Pour sauce sachet from stir-fry kit into a bowl. Stir in the lime rind, lime juice and 1 tbs water. Brush pork with half the sauce mixture. Heat a chargrill on high. Cook pork for 2 mins each side or until cooked through.
Heat a greased wok or large frying pan over high heat. Cook vegetables from stir-fry kit, stirring, for 2-3 mins or until just tender. Add remaining sauce mixture and stir-fry for 1 min. Add the pork and stir-fry for 1-2 mins or until combined.
Heat rice following packet directions. Divide the rice and pork mixture among serving bowls. Sprinkle with coriander and serve with lime halves.
