Ingredients

  • 12 small just-ripe plums, halved, stoned
  • ¼ cup (55g) caster sugar
  • 1 tbs orange juice
  • 8 thyme sprigs
  • 200g crème fraîche or light sour cream
  • 1 tbs icing sugar mixture
  • ½ tsp ground cinnamon
  • ¼ tsp ground cardamom
  • 8 Coles Crumpet Rounds, toasted

Method

  1. Step 1

    Preheat oven to 180°C. Line a baking tray with baking paper. Arrange plums, cut-side up, on tray. Sprinkle with sugar and drizzle with orange juice. Sprinkle with thyme. Bake, turning occasionally, for 10-15 mins or until plums are tender and release their juices. Set aside to cool slightly.
  2. Step 2

    Combine the crème fraîche or sour cream, icing sugar, cinnamon and cardamom in a small bowl.
  3. Step 3

    Arrange crumpets on serving plates. Spoon over crème fraîche mixture and top with plums. Drizzle with any pan juices.
