Ingredients

  • 250g fresh strawberries, hulled, quartered
  • 2 tbs caster sugar
  • 150ml thickened cream
  • 150g mascarpone
  • 1 tsp vanilla bean paste
  • 8 Coles Brand Make At Home Meringue Nests
  • Strawberries, extra, to decorate
  • Mint leaves, extra, to decorate

Method

  1. Step 1

    Place quartered strawberries in a bowl. Sprinkle with 1 tbs caster sugar. Set aside for 30 mins or until they begin to release their juices. Place strawberries in a food processor and process until coarsely chopped.

  2. Step 2

    Place cream, mascarpone, vanilla bean paste and remaining sugar in a bowl. Use an electric beater to whip until soft peaks form. Gently fold in the strawberries, being careful not to over mix.
  3. Step 3

    Arrange meringue nests on a serving platter. Divide strawberry cream among the meringues and top with fresh strawberries and mint leaves.
