Topped with sweet summer fruits, these mini meringue nests are a tasty way to make the most of the seasonal produce.

Summer fruit meringue nests

Ingredients

  • 300ml thickened cream
  • ½ cup (160g) lemon curd
  • 80g pkt Coles Meringue Nests
  • 1 yellow peach, thinly sliced
  • 1 white nectarine, thinly sliced
  • 125g punnet raspberries
  • White chocolate curls, to decorate

Method

  1. Step 1

    Use an electric mixer to beat the cream in a bowl until soft peaks form. Beat in half the lemon curd.
  2. Step 2

    Place the meringue nests on serving plates. Fill with the cream mixture and spoon over the remaining lemon curd. Arrange peach, nectarine and raspberries on top. Sprinkle with chocolate curls to serve.
