Stir Fry

Ingredients

  • 1 packet Coles Kitchen Stir Fry Superfood Mix 250g
  • 4 Eggs
  • 400g Hokkien Noodles
  • 1/2 cup Hoisin Sauce
  • 3 Tbsp Sweet Chilli Sauce
  • 1 Tsp minced Ginger
  • 1 Tsp minced Garlic
  • 1 1/2 Tbsp Cornflour (mix with 1 Tbsp water to make a slurry)
  • 1 Tbsp Sesame oil
  • Sesame seeds, for garnish

Method

  1. Step 1

    Bring a small pot of water to a boil. Add eggs and cook for 6 1/2 mins for a soft jammy yolk. Once eggs are cooked, place in an ice bath then set aside.

  2. Step 2

    While the eggs are cooking, place noodles into a medium bowl and cover with boiling water, leave to soften to 2-3 minutes. 

  3. Step 3

    In a small bowl, combine hoisin sauce, sweet chilli sauce, ginger, garlic and cornflour slurry, set aside. 

  4. Step 4

    Heat sesame oil in a large wok or frying pan on medium heat. Add Coles Kitchen Superfood Stir Fry vegetable mix and toss gently for 1 minute.

  5. Step 5

    Drain noodles and add into pan with half of the hoisin sauce mix. Cook for 2-3 minutes then add remaining sauce. Cook until sauce has thickened and vegetables have slightly softened. 

  6. Step 6

    Divide stir fried noodles between four large bowls. Top with peeled and halved boiled eggs and a sprinkle of sesame seeds.
