Suphaluck Ongcharoen’s ham and cheese muffins

Ingredients

  • 2 cups (300g) plain flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 2 cups (240g) coarsely grated cheddar
  • 85g fetta, crumbled
  • 3/4 cup (135g) finely chopped ham
  • 3/4 cup (110g) coarsely chopped sun-dried tomatoes
  • 3 spring onions, thinly sliced
  • 1 Coles Australian Free Range Egg, lightly whisked
  • 1 cup (250ml) milk
  • 1/4 cup (60g) Coles Sour Cream
  • 1/4 cup (60ml) canola oil

Method

  1. Step 1

    Preheat oven to 180°C. Line a 12-hole, 1/3 cup (80ml) muffin pan with paper cases. Combine the flour, baking powder and bicarbonate of soda in a large bowl. Add the cheddar, fetta, ham, tomato and spring onion and gently stir to combine.
  2. Step 2

    Whisk the egg, milk, sour cream and oil in a jug to combine. Add to the flour mixture and stir until just combined. Divide evenly among the paper cases.
  3. Step 3

    Bake for 20-25 mins or until a skewer inserted in the centres comes out clean. Transfer muffins to a wire rack to cool slightly. Serve warm or at room temperature.
