  1. Step 1

Combine the flour, yeast, sugar and salt in a large bowl. Make a well in the centre and add the water and oil. Stir with a wooden spoon until well combined, adding more flour if needed. Turn the dough onto a lightly floured surface and knead for 6-8 mins or until smooth and elastic. Return the dough to the bowl and cover with a tea towel. Set aside in a warm, draught-free place for 1 hour or until dough doubles in size.
  2. Step 2

Punch down the dough. Turn onto a floured surface and knead until smooth. Cut dough into 6 portions. Roll out each portion on a lightly floured surface to an 18cm disc. Preheat oven to 200°C. Line 2 large baking trays with baking paper. Place the pizza bases on the lined trays and spread evenly with the pizza sauce.
  3. Step 3

To make Dad’s supreme pizza topping, sprinkle the cheese evenly over the pizza bases. Sprinkle with the capsicum, onion, pineapple, ham, sausage, olives and chilli flakes, if using.
  4. Step 4

Bake for 12-15 mins or until the cheese is golden and the bases are crisp.
