Sweet and sour chicken drumsticks

Ingredients

  • 425g can Coles Pineapple Pieces in Syrup
  • 1/4 cup (70g) Coles Tomato Sauce
  • 1 tbs cornflour
  • 1 tbs white vinegar
  • 8 (1.2kg) Coles RSPCA Approved Chicken Drumsticks (from the deli)
  • 1 red capsicum, seeded, coarsely chopped
  • 1 1/2 cups (300g) long-grain white rice

Method

  1. Step 1

    Preheat oven to 180°C. Drain the pineapple, reserving the liquid. Combine the pineapple liquid, tomato sauce, vinegar and cornflour in a small bowl and whisk to combine.

  2. Step 2

    Place chicken in an ovenproof pan with pineapple and capsicum. Pour over pineapple juice mixture. Bake, turning chicken occasionally, for 45 mins or until chicken is cooked through.

  3. Step 3

    Meanwhile, cook rice following packet directions.

  4. Step 4

    Serve the chicken mixture with rice.
