Sweet and sour chicken with fried rice

Served with an easy fried rice, this sweet and sour chicken dish is a classic you can't go wrong with.

Ingredients

  • 2 tbs peanut oil
  • 500g Coles RSPCA Approved Chicken Breast Fillets, sliced
  • 1 red onion, cut into wedges
  • 200g snow peas, trimmed
  • 1 red capsicum, seeded, chopped
  • 515g Kan Tong Sweet & Sour Cooking Sauce
  • ½ x 440g can pineapple pieces in natural juice, drained
  • 400g can baby corn spears, drained
  • 2 x 250g pkts Uncle Ben’s Express Special Fried Rice
  • 2 tbs Kikkoman Naturally Brewed Soy Sauce
  • ½ cup (60g) frozen peas
  • 1 spring onion, sliced diagonally
  • Coriander leaves, to serve

Method

  1. Step 1

    Heat half the oil in a large frying pan over medium-high heat. Add the chicken and cook, stirring occasionally, for 5 mins or until browned.
  2. Step 2

    Add the onion, snow peas and half the capsicum to the pan and cook, stirring occasionally, for 3 mins or until vegetables start to brown. Add the cooking sauce and pineapple and stir to combine. Cook for 2 mins or until heated through.
  3. Step 3

    Meanwhile, heat the remaining oil in a medium frying pan over medium heat. Add the corn and remaining capsicum and cook for 2 mins or until starting to brown. Add the rice, soy sauce and peas and stir to combine. Cook for 2 mins or until heated through. Add the spring onion and stir to combine.
  4. Step 4

    Sprinkle the sweet and sour chicken with coriander leaves and serve with the fried rice.
