Marinated in a tangy sweet chilli and lime mixture, this easy salmon recipe is a great weeknight meal idea. Served with a fresh veggie noodle salad and dinner is done! This dish is a must-try.

Ingredients

  • 250g Coles Sweet Chilli & Lime Marinade
  • 4 Coles Deli Salmon Portions Skin On
  • 60g Coles 4 Leaf Salad Mix
  • 250g zucchini noodles
  • 1 carrot, peeled, cut into long matchsticks
  • 1 red capsicum, seeded, thinly sliced
  • 2 spring onions, thinly sliced
  • 1 tsp fish sauce
  • 2 tbs soy sauce
  • 2 tsp caster sugar
  • 2 tsp sriracha or chilli sauce
  • 1 garlic clove, crushed
  • 1 tsp sesame oil
  • Lime halves, to serve

Method

  1. Step 1

    Combine the marinade and salmon in a shallow ceramic dish. Turn to coat. Place in the fridge for 10 mins to develop the flavours.
  2. Step 2

    Preheat oven to 180°C. Line a large baking tray with baking paper. Place salmon on the lined tray and bake for 20 mins or until cooked through.
  3. Step 3

    Combine the salad leaves, zucchini noodles, carrot, capsicum and spring onion in a large bowl.
  4. Step 4

    Combine the lime rind, lime juice, fish sauce, soy sauce, sugar, sriracha or chilli sauce, garlic and oil in a screw-top jar. Shake to combine. Drizzle salad with dressing and toss to combine.
  5. Step 5

    Divide the salad among serving plates. Top with salmon and serve with lime halves.
