Sweet n Spicy Celery and Pork Stir Fry

Ingredients

  • 2 tsp peanut oil
  • 5 Coles Australian Pork Spare Ribs, fat and bone trimmed, coarsely chopped
  • 6 celery sticks, thickly sliced
  • 1 small red onion, cut into wedges
  • 2 garlic cloves, crushed
  • 2 tsp finely grated ginger
  • 2 tbs soy sauce
  • 2 tbs honey
  • 1 long red chilli, thinly sliced
  • Steamed rice, to serve

Method

  1. Step 1

    Heat half the oil in a large wok or frying pan over high heat. In 2 batches, add the pork, stir-frying until browned all over. Remove from the wok or pan and set aside.

  2. Step 2

    Reduce heat to medium-high and add remaining oil to the wok or pan. Add the celery, onion, garlic and ginger and stir-fry for 3 mins or until the onion is soft. 

  3. Step 3

    Return the pork to wok. Add the soy sauce and honey. Stir fry for 2 mins or until the pork is heated through. Add the chilli and toss to combine.

  4. Step 4

    Serve the celery and pork stir-fry with rice.
