Sweet potato and black bean tacos

Ingredients

  • 500g gold sweet potatoes, coarsely chopped
  • 400g can Coles Mexican Beans
  • 420g can Coles Black Beans, rinsed, drained
  • 10 Coles Burrito Tortilla Wraps
  • 1 tomato, finely chopped

Method

  1. Step 1

    Steam, boil or microwave the sweet potato for 5 mins or until just tender.

  2. Step 2

    Heat a large non-stick frying pan over high heat. Add the combined beans and sweet potato and cook, stirring, for 3 mins or until heated through.

  3. Step 3

    Meanwhile, heat a barbecue grill or chargrill on medium. Cook the tortillas for 1 min each side or until heated through.

  4. Step 4

    Spoon bean mixture over tortillas and sprinkle with tomato to serve.
