Sweet potato and date cake

Ingredients

  • 2½ cups (400g) wholemeal self-raising flour
  • 1 cup (220g) brown sugar
  • 1 tsp mixed spice
  • ½ tsp bicarbonate of soda
  • 3 cups grated gold sweet potato
  • 16 fresh dates, seeded, chopped (about ½ cup chopped dates)
  • 1 cup (250ml) vegetable oil
  • 3 Coles Australian Free Range Eggs
  • 2 tsp finely grated orange rind
  • 125g cream cheese
  • 50g butter, softened
  • ½ cup (80g) icing sugar mixture
  • orange zest, to serve

Method

  1. Step 1

    Preheat oven to 180°C. Grease and line a 20cm round cake pan.
  2. Step 2

    Combine flour, sugar, mixed spice, bicarbonate of soda, sweet potato and date in a large bowl. Make a well in the centre. Combine oil, eggs and orange rind in a bowl. Pour into flour mixture. Stir until well combined. Pour mixture into the prepared pan.
  3. Step 3

    Bake for 1 hour or until a skewer inserted in centre comes out clean. Set aside in pan for 5 mins before turning onto a wire rack to cool completely.
  4. Step 4

    Use an electric mixer to beat cream cheese, butter and icing sugar in a bowl until light and fluffy. Spread over top of the cake. Sprinkle with orange zest.
